Lizard and Mussel Chowder

We have never been big on precise measures, but here is what we did:

In a slow cooker, add the flathead (chunks), mussels, large tin of diced tomatoes, cut up fresh tomatoes, beans, and a generous amount of white wine. Slow cook for a couple of hours. Mix every hour.

Add coriander, fish sauce and lime juice and mix and cook for another 15 mins.

We also baked a whole flathead simply by prep'ing the fish and filling the cavity with tomotoes and limes. Cooked it for 1 hour in foil, 200 degree oven.

Then simply place the whole fish in a serving dish and splash the chowder around the sides.

Good on the chew!
