quick fillet!

to me the fillets look stiff, as if they are at a near frozen point making them easier to fillet

After I left the building industry,I ran a food outlet and mobile catering for a few years,with meat like whole eye fillets etc,you would put them in a really low temp commercial fridge that firmed them up for slicing, thats looks like what they have done in the video.
