Hy guys just wondering if two full river 105a/h AGM's batteries will be fine for a 80lb minn Kota

They will be fine.

24v is less resource hungry that 12v so you wont have a problem.

Bigger batteries would be better but if you already have those you may as well use them.

As long as you have not got it mounted on a dam boat, eg want to run it all day on an electric only dam.

Just watch your trim when you place the batteries.
