@jon my favourite recipe for the smaller ones is to dust them in a bit of potato starch salt and white pepper and deep fry till they go nice and crisp. Eat the whole thing. Perfect with cold beer and some mayo to dip em in or just as they are. I also  devein them with a tooth pick after making a small slash across the back. Got addicted to eating them this way living in Asia.

wow awesome. I have done them this way but used flour. They were not as crisp as these ones! You learn something every day. Fantastic stuff. Off to get some potato starch.
