    dry.
    layer in bake dish.
    Salt, Brown Sugar. Fillet.... Topped with honey, soy,pepper, OL Bay seasoning(lightly) Scotch, Dill.. Then more salt and sugar. then next fillet/layer.  It will all go to liquid in 24 hrs.. Then rinse FW,  and put under a fan for an hour or so. If you can hang in the beer/bait fridge for a day dripping onto newspaper.  Hot and fresh strait out of the smoker is best. My mac frames I scrape the meat off and in a bowl I add wholegrain mustard, Egg mayo or greek yogurt, lemon, olive oil, red onion, parsly etc... whatever you reckon realy.... Mash it up and on a biki with a beer is the go. Better than burying frames for the worms

    Heat 1-  1.5 hrs. Or atleast until Smokai is empty. Open hood and see with a fork if fish is cooked. 
    Smoke and cook at same time.

    You just tie the rubber around the stainless bar where it comes up from the flat plate, Go thru the ring, and tie it back to the bar.. Its just so the ring stays on the bended part.. See pic of planer where i drew a black squiggle. You could use light mono aswell.
    Also see my hooks for trolling. 86lb wire. Make sure you put a swivel as seen in pic one behind the leading hook keeps the rig true, First hook just behind head. and I only put one of the gangs in. The other just floats. If I use live school mac there is 3-4 gangs at the back end.Only put one in so stays alive and swims better.
    Wire in front of lead hook is about a foot to a small barrel swivel. Then 8-10 ft 90 lb mono clipped to the paravane.
    If you cant clip onto paravane then Crimp on a small section of mono to it(1 foot) going to a ring or ball bearing barrel swivel. 
    I have a foot of Mono going to a coastlock swivel attached to the planer fin. Then I just clip on my premade 8 ft rigs as reqd

    Got this sea run brown trout... 80 cm exactly. Est 6kg
    Using my jungle perch  2kg rod In the arthur river in Tassy.
    4lb braid. 10 lb leader, Rapala trout lure.
     
    20 min fight in a single man paddle kayak. Chased with electric motor cpl hundred mts down river. EPIC fight. Jumped strait over the front of my paddle ski/canoe. Sh#t meself nearly when I first saw it... Sea run trout dont fight like your average lake brown trout.. They are crazy.
    Then paddling back down stream with current there is a stretch where the westerly comes strait up..So wind Vs tide. Whats that white stuff coming my way... A squally hail storm and 30-40 knots of wind. Because of the waves there I couldnt turn side on or Id roll kayak so had to keep nose strait into waves and wind and cop the pea size hail in the face. Tassy. where rain freezes on the way down.

    30 odd kg GT on 20 lb braid and a 4-6 kg spin stick.
    1 1/2 fight and cpl mile chase in tinny

    Shark is great for eating especially the 1 mtr range..
    Tricks. As soon as u catch it Bat over the head. Cut fins off and put knife through all the gills on one side. Strop tail and put in seawater to bleed out 5-10 mins. 
    Remove head and guts... Then eski for few hours,
    Once you get home fillet and skin. Then cut fillet into bread size squares and fillet the fillet so it is 1-2 cm thick. The thinner the better. Then chop into strips and put in a bowl of milk for atleast 4 hours. overnite is fine.
    When ready to cook rinse off pieces then roll in flour etc and cook.
    I have left it in the milk in fridge for a cpl days too. It is still great
    My kids love shark nuggets and even far north qld fish snobs have said it was nice. not knowing it was shark.
    When I have a quiet day or all the big ones bust me off, there is always a feed of shark if reqd. I just tell me Mrs its Brown/Bronze coral trout.. hahah

    Dunno them. I actually used a home made one that a guy sells thru tackle world Cairns. I towed this bastard to weipa and back about 15 times doin 10-12 knots with a smith jig behind it. Cargo ship fishing with chord and bungee. Never missed a beat. The one in the photo is just for the Idea/Pic. I have only used this style in the photo. And they troll easy on a TLD 25 and 15 kg rod with 15 kg line. My only issue with what i use is wtih big baits the ring can slide and trip. So I rubber band it to stop this. If a fish hits the rubber band snaps and the paravane trips. I only use a small one on a rod. The weight is about a 4oz bean sinker.
     
    Just looked at the yamashita. I dunno. Looks gimicky.
    These stainless ones are pretty indestructable. Like I said I put one thru a few thousand miles.
    There are a few youtube vids of the Yanks using them on rods n reels trolling 10 knots. Have a look there. They call it planer fishing. Pro mac fishos up gulf way use them on chordlines with Gar wogheads. Very versatile. Slow trolled as they have lead on em you could run them pretty deep if you need to. Yamashita would be depth limited as no lead.

    I have made this in the last 12 months. 
    The  smoke generator on the side is from NZ called a SMOKAI. 150$ therebouts.
    Awesome contraption. U can attach them to anything realy. You can even buy an attachment that hooks strait into the weber Q range.
     
    Anyway my smoker came together remarkably well.
    Split a keg. Hinge it. Some metal feet to stop it rolling. 
    Its funny but the smokai shaft fits exactly into the keg hole. And it sits nicely on the weber BBQ. 
    I turn the BBQ on full which gets the keg to around 80 deg celcius/ Just rite for fish. It seems as though I fluked the whole thing.
    They do a great job. One canister of a mix of chips and sawdust gives an hr n half smoke, And the fish comes out cook nicely.  Can definitely recommend SMOKAI.
     
    I mainly bought it to smoke Mac frames as i thought such a waste to bury them, Also the wings do up extraordinarily well.
    Now I am going to experiment on turning TRASH fish (bludger trevally/ Mac tuna etc) into something special.
     
    At the end I just water blast it out. Does a good job. Cheaper than a Bradley

    haha... had to when she saw me covered in mud, then scrub the boat off from all the dried mud on it. Then wash the car cover. And I had a pic.

    Dunno them. I actually used a home made one that a guy sells thru tackle world Cairns. I towed this bastard to weipa and back about 15 times doin 10-12 knots with a smith jig behind it. Cargo ship fishing with chord and bungee. Never missed a beat. The one in the photo is just for the Idea/Pic. I have only used this style in the photo. And they troll easy on a TLD 25 and 15 kg rod with 15 kg line. My only issue with what i use is wtih big baits the ring can slide and trip. So I rubber band it to stop this. If a fish hits the rubber band snaps and the paravane trips. I only use a small one on a rod. The weight is about a 4oz bean sinker.

    These stainless ones are pretty indestructable. Like I said I put one thru a few thousand miles.
    There are a few youtube vids of the Yanks using them on rods n reels trolling 10 knots. Have a look there. They call it planer fishing. Pro mac fishos up gulf way use them on chordlines with Gar wogheads. Very versatile. Slow trolled as they have lead on em you could run them pretty deep if you need to. Yamashita would be depth limited as no lead.

    I troll live school macs aswell. Some times dead ones up to 2 kg. 
    YOUTUBE. Live bait rigging mackeral. find a 17 min vid from modern fishing doing a special on a Pro fisho out of Bundy. Peter Stevens i think.. Well worth a watch. Very direct and no BS. You will learn alot. Team that up with a paravene and you will do well.  If you know where macs hang.
    Its funny that I was anchored with livies out for an hour in the exact same spot I caught the fish slow trolling . Wouldnt touch the livies anchored. But as soon as I dragged em slow behind paravane I got 3 good hits each pass... Sometimes you just have to try something slightly different.

    too true. Yet I have smoked a few pieces of defrosted MAC.. I cant tell the difference

    Wish I had a lemon myrtle.. Oh lemon grass is a good smoker too. Even eucalypt leave have a great smell/smoke.
    Diet,,, hahah.. fish is good for you. Its all the other junk we eat.

    Another tip.. In the bottom of keg, throw some old teabags (non milked) lemon peel, orange peel, Kaffir lime leaves...Just some things you can smolder to give a different taste. Not all at once.. But the ideas there to try flavours. 
    If I did a soy base marinate with ketchup manis, salt Brown sugar.. then Id roll fish in dry chilli flakes maybe a smear of ginger and before smoking.. Kaffir lime leaves in bottom of keg..
    Then I just water blast the ash out.

    HAHA. I aint no pro. But got a few ideas for the next trash fish.. Nova Lox with a light smoke for mac tuna and or bludger trevally, Brassy trevally. Gotta be able to turn that stuff into treasure somehow,
     
    Oh ESTUARY COD  are superb smoked. you know those golden orange spot ones.
