Back From Life Bream?

Hello

Today I went fishing at the pine and caught a decent bream which I kept and I did the bleeding out process cut the fish throat, then snap the head back, then transfer the fish to ice and then I had to tie a new leader on and a hook on and get a drink which took a good few minutes while the bream was for certain dead and rigor mortis had set in while the fish was in my soft cool bag and once I went back to fishing a fish started flapping around madly (but very quick like rapid twitch's) in my cool pack knocking it over and I opened my bag up and fish was upside down while completely dead and stiff.

Has anyone had this weird event happen before? It's a first for me and the fish tasted normal

bit like when a lizards or gecko tail falls off, it can still wriggle around for a little while.
