just a running ball sinker on 6-10lb line and a size 2 or 4 mustad bloodworm hook, put the hook through the eye of the hardy head and pin it back into the end of the tail so there is a bend in the bait, never missed a hook up this way and was taught by an old local off the hornibrook a few years ago.

If alive, I stick a hook through its mouth, out through the hard part behind the top lip with no lead. Bream and jacks seem to always take them from the face

If using dead,put hook through the eye cavity just behind the eye and put a half hitch on the shank of the tail,keeping the line tight between the eye of the hook and the half hitch

I like using the half-hitched method too, seems to keep your bait straight and more presentable. Bream in my experience ALWAYS hit the head first so you want your hook point to be facing away from the head and it will better your chances. Good luck.
