Hey Mate

Dept of environment & resource management have some info, it states you can use stainless steel hooks but also discusses the disadvantages to fish etc... there are obvious benefits to use non stainless steel for the fish to have a better chance of survival and they are encouraging use of non stanless steel.

I have attached a link for more info

Just out of curiosity what do you use them for? i'm assuming sharking ?

Cheers

Like Shiamnobowie said they are only really used at all by game fisho's trolling and even then they are falling out of favour as people are becoming more senitive to looking after fish populations. Other things to consider is that chemically sharpened hooks are cheaper, sharper and if you aren't too lazy to rerig every now and again are a win win.
