Rubbery Fish

Last night we had some hussar for dinner. 4 caught on the same day in the same way with the same bait and treated the same way after they were caught. Scailed and gutted and baked in foil in a curry.

3 of the fish had soft flakey moist flesh but one... sorry @aussie123 was a ball of rubber. It shrunk and twisted the bones and was almost imposable to eat . The meat was tasty but very rubbery. 

I have had this one other time with some spangled emperor. 

Has anyone else experienced this?

Does anyone know what causes it?

Is there a way to avoid this in the future?

on another note.... I went to a Chinese restaurant and ordered the fish of the day did not enjoy it at all as it was very tough. I called the waiter over and said "Hey mate, this fish is rubbery" and he said "fank you velly much I will tell the cook you enjoyed it" ...... boomtish......
