Filleting Bream

filetting any bream is a waste of time and effort. i know it is a lot easier to eat and all that but the recovery off a bream is bad at the best of times and no matter how good you are at filleting them, about 25-30% is all you get once filleted and skinned, not a lot of change from a 800g fish. if you want to eat bream, gut and scale, head off or on (if on take out gills), wrap in alfoil, some garlic, chilli, fresh coriander and lime onto the bbq grill, 5 min each side. goes good!

a small point - i know that the legal size for bream is 23cm, however, anything under about 28-30cm is not even worth the effort for the amount of meat you get. much better to let them get a bit bigger imho. not knocking you in any way if you do keep bream 23-28cm, it is well within the rules and that is all that matters to me!
