Aussie Medley Fish & Chips

Well after getting a few species today I wanted to make my favourite fish and chips and compare flavours.

Picture: Three fillets.

1 x Cod.

1 x Snapper.

1 x Emperor.

Fry off Asparagus now. Saves cleaning stuff out of the pan later. Just wrap it in foil and all is well.

Cut fish into "Nugget" size peices.

Easy to eat.

Full of flavour.

Easier to distribute more species to more people!!

Dust in flour, salt & pepper and add to a pre heated pan with butter and a touch of oil oil.

The oil is important as you want the pan HOT and the oil prevents the butter from burning.

Pre prep root veges to go with it.

My secret weapon is the Gems. Terrible for But I only have them from time to time. Soak up the fish juices and vineger so damn well!

Shallow fry the fish until golden brown. The flour coating will help this process and crisp it up nicely without becoming dry. In fact it should remain nice and juicy.

Serve to taste.

Extra salt and pepper and you like.

I give a liberal dousing a aged white wine vinegar. Love it.

Also being winter a nice light red.

Now I am totally jealous! I'd kill for some super-fresh saltwater fish ... haven't had any in so long.
