Dust in flour, salt & pepper and add to a pre heated pan with butter and a touch of oil oil.

The oil is important as you want the pan HOT and the oil prevents the butter from burning.

Pre prep root veges to go with it.

My secret weapon is the Gems. Terrible for :P But I only have them from time to time. Soak up the fish juices and vineger so damn well!

Shallow fry the fish until golden brown. The flour coating will help this process and crisp it up nicely without becoming dry. In fact it should remain nice and juicy.
