ive been catching a lot of flat head but they seem to have little meat on them, is there a way to get more meat off of them?

How are you filleting them?

They are pretty good really. I struggle with the ribs and one sneekly pin bone but when patient they seem to yield a fair bit.

Lots of good videos on YouTube. I think they are one of the easiest fish to fillet. The fillets are not very big around the minimum legal size. Around 50cm is the sweet spot in my opinion,

Beat me to it .... .  To me they are easy to fillet but I always find them a little fiddly/tricky to skin due to the curved shape.

Sidenote: we were snorkelling at the mouth of Cudgera Creek at Hastings Point on Saturday and we saw a flathead around the metre mark lying on the rocks - beautiful fish and an awesome encounter, just wish I had a rod nearby ...... . Also wish I could somehow have measured it.

i catch 65 cm one which i reckon taste great

i fillet them by cutting under the fins and then taking the knife down the spine to the tail then take the skin off.  i did cook one whole after gutting it, i think it might be the way to get the most meat off of them.

I just cut down behind the first fin, then run along the backbone. Gets two big chunks of meat off.
