Whole deep-fried snapper thai style.

Step 1. Clean your catch.

Step 2. Trim all fins, julienne some carrot and ginger, slice some shallot, dice some tomato and mix oyster sauce, light soy and sugar in a bowl.

Step 3. Pat the fish bone dry, score the fish both sides and cover with flour.

Step 4. Deep fry the fish in whatever vessel is available. Whilst this is going for about 8-10mins (depending on the size...) heat some peanut oil until smoking hot.

Step 5. Remove fish, drain, plate and garnish with ginger, shallot, carrot and tomato then pour over the boiling sesame oil.

Step 6. Spoon on the oyster, soy, sugar mix and serve with steamed rice.
