Chinese Inspired Red Claw

Now I stress this one is Chinese "Inspired". No specific recipe followed (or known)!! Tanya and I were just in the mood for something spicy.

Red claw tails cleaned and ready to prepare.

This is a great tip Ray gave me. Boil for only about a minute before removing the flesh, makes removing it ten times easier.

I use a small sharp blade and cut down the soft side. Then simply peel the shell back and walla.

These are the flavours used for my rub.

Add my rub ingraditants to the morter.

Crush them up good and proper.

Prepare vege. I used Broc, Carrots, Shallotes and Boc Choi.

Chuck into a pre heated wok. Notice the sesmame seeds were added earlier to brown in the oil.

Now for my cheat. Like I said, dont fully graps the subleties of the flvaour I was looking for but I knew chillie and lime were involved I would recommend this brand by the way. No artificial or added anything and very tasty.

Dust off the red claw with the rub.

Shallow fry in a hot pan. I did this in batches to keep the pan as hot as possible. Only takes a minute or so.

Money shot. Yum. Drinks? A dry white and beer served T and I well.

ooh.. looks good dude try light corn-flower instead of plain flour next time. Should make it a little crispier

Angus, they seriously look the goods. Shame I am allergic to chilli!

Quick tip from a cooking point of view. I am not sure whats in the glass jar with yellow lid, but if you were to add all the dry ingredients to a hot DRY pan and toast for just a minute or 2 until aromatic they will then pound producing a more intense, great flavour.

Seeing that we are not allowed to clean or process out catch from NPD on the site I think that we will have to set up Ferals new toy outside the gate for a live Gorries masterchef session next time we go to NPD.
