Flathead Bolognaise ;)

Ingredients

Flathead fillets about 500 gram pull the bones out if you can

Handfull of beef mince (not a lot)

about 5 Mushrooms

1 LARGE table spoon of crushed garlic

half a large bag of pasta (whatever takes your fancey)

half a cup of grated carrot

1 small container of tomato paste (about 200ml)

1 can of chopped tomatos (mashed)

2 regualr brown or red onions

salt

ground pepper

touch of Coriander

touch of parsley

can add a small grating of ginger if you got it

1/4 tea spoon of curry

4 medium bay leaves

1/4 cup of olive oil

Instructions

-Boil the handful of mince in water for 15-20 minutes then drain off fat, set aside to drain.

-Fry mince in light olive oil till golden brown.

- Fry onion finely chooped

- add carrot after 5 minutes (grated)

- add garlic

- add well chopped mushrooms

- fry then add tomato paste and mashed tomato peices

- add touch of coriander

- add few table spoons of water

- add 1/4 teaspoon of curry

- add bay leaves

- add parsely

- add ginger

- add few twists of pepper and a hit of salt

--- stir and warm through to cook on medium flame

should smell good now so let simmer for 10 minutes

- add flathead fillets then let simmer for 30 minutes

- put a pot of water on the boil for pasta with a pinch of salt in it

-cook pasta quick on high till 'el dente'

- drain cooked pasta then add to bolognaise and mix in and simmer or alternatively

cook bolognaise then drain pasta and add the bolognaise flattie sauce on the plate.

Serve with a green salad.

tips:when cooking do not overstir the flatty sauce because you want those big flatty chunks to stay, if you overstir them they will break up too much.

serves about 2-3 so alter as needed.

yeah the mince is kinda optional depending on taste but it comes up the goods, just have to keep the big fleshy vegetables out of it and the fish flavour is very nice indeed.

ypu cpuld even drop the tomato and onion and go a nice creamy flathead sauce on pasta :)

yeah it the goods, just keep the watery vegetables out of the mix and most combinations of the above recipe will be very nice.

ease off on the tomato canned or cut back on the onion, either way, your right the pasta and flattie is an

awesome match ( drop the mince all together if youy like).

Ginger and garlic is my favourite herb with fish

yeah mince goes good with almost anything too.

for fish i like butter garlic onion lemon and tomato.on the bbq .

gut and de-head and stuff or on top of fillets .wrapped in al-foil.

simple and always good.

the different recipes people put up are good .

bring it to my attention to experiment and try different things .

after all food is good .who doesn't luv to eat .
