Jewie with Mash n' Sprouts

Step 1. Get some Jewfish, Mulloway or any decent reef fish that gives a nice, thick, fillet portion. I prefer to catch mine rather than buy it. :P

Step 2. Fillet the fish or get your fishmonger to do it for you. I prefer to have my personal chef do mine...

(Jokes aside, I asked my good friend to work it as his knife skills are far more superior and we did share the bounty...)

Step 3. Get some good quality mashing spuds like Dutch Cream, some Brussels sprouts and some bacon.

Step 4. Pat dry the skin of the fish and sprinkle sea salt.

Step 4. Dice the bacon, steam the brussels sprouts for about 5-6 mins and get the taters boiling in some salted water. Get a non-stick pan to high heat and add some oil.

Step 5. Once the sprouts are steamed, remove and set aside and get the saucepan back up to heat with some olive oil and add the bacon. Stir and let it get a bit crispy but not burnt.

Step 6. Whilst the bacon is browning, put the fillets skin side down to the hot pan and cook until you see the flesh turning white about two-thirds the way through. Reduce heat to low and flip the fillets.

Step 7. Add some butter to the bacon and throw in the sprouts (If they're biggish, cut them in half). Get the heat down and put a lid on the saucepan.

Step 8. Once the taters are cooked, get rid of the water, throw in butter, a splash of milk and salt and pepper to taste. Mash then whisk it 'til it's the texture of the best mash you ever had at that restaurant that one time...

Step 9. Spoon a generous serve of mash then place the fish, skin side up on the mash and spoon the sprouts and bacon on the side.

Step 10. Tuck in!

There you have it. River to plate in 10 easy steps.

Thanks for the kind words guys.

Been meaning to do a recipe for a while,hope you give it a go, especially the "noisy boys".

You can get the baby ones from the supermarket and they're sweeter than the normal ones. Steaming 'em first is the key so that they're not boiled and all the bitterness starts to come out. Plus bacon! What's not to love?!?!?!

Mate i dont cook but after this post im going to try making the mash & fish looks sooooo Dammm yummmmm, what a great looking dinner.
