Turducken

My family had xmas early this year gathering on saturday night. I was in charge of the meats, so fired up the smoker and jammed a few birds up each others butts and made a Turducken ( turkey stuffed with a duck, stuffed with a chicken ) :

and a Cherry Glazed Double Smoked Ham

Note some of the meat seems pink . Did you pump some of it?

Is the recipe secret?

I have just finished smoking our xmas chooks and hams.No photos as its the same as last year.

Looks so good, my wife felt sorry for me she went to aldi and got me a electric slicer, so we are having sliced ham,turkey,roast pork and corned meat,plus all the coleslaw vegies will go through it. So now poppy can sleep in.:woohoo:

I would hazzard a guess and say the pink is from the outer layer of bacon rashers used to wrap the roll in

I had the butcher bone them for me, I would do it myself, but I was too concerned about it being out too long and developing bad bacteria. The butcher I go to almost needs to hand out fur coats at the door.

The pink is the smoke ring. This is caused by myoglobin reacting with carbon monoxide to form a heat stable pigment.

We had one of these last year. Takes about 12 hours to cook. If anyone is looking for them in the future the butcher at colmslie does them for about $120. Bit of a novelty but well worth it!
